Dutch Babies 

  •  8 eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 3/4 cup plus 1/4 cup plus 2 tablespoons sugar
  • pinch or 2 of salt
  • 2 cups light cream or milk
  • 1/4 cup melted unsalted butter
  • 2 teaspoons vanilla extract
  • 1/2 plus 1/2 teaspoon ground nutmeg
  • 1/2 cup (1 stick) unsalted butter
  • 1 teaspoon ground cinnamon
  • 2 large tart apples, peeled, cored, and sliced

    In large bowl, blend eggs, flour, baking powder, 2 tablespoons sugar, and salt.  Gradually mix in cream, stirring constantly.  Add melted butter, vanilla, and 1/2 teaspoon nutmeg.  Let batter stand for at least 30 minutes or overnight.  Preheat oven to 425 degrees.  Melt 1/2 cup butter in large ovenproof skillet, brushing butter up sides of pan.  In small bowl, combine 1/3 cup sugar, cinnamon, and remaining 1/2 teaspoon nutmeg.  Sprinkle mixture over butter, in pan.  Line pan with apple slices and sprinkle remaining 3/4 cup sugar over apples.  Bake 20 to 30 minutes until apples are tender.  Yields 8 servings.
