Oatmeal Pancakes 

  • 2 cups old fashioned oatmeal
  • 2 tablespoons brown sugar
  • 1 teaspoon baking soda
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • pinch of salt

Mix in another bowl

  • 2 cups buttermilk
  • 1/4 cup oil
  • 2 beaten eggs
  • 1 teaspoon vanilla

     Add liquid to dry ingredients and blend lightly - do not over beat.  Allow to stand for 30 - 45 minutes for batter to thicken.  (If you think it is too thick you can add a little milk)  Cook on hot griddle.

Cinnamon Syrup

  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • 1 cup apple cider
  • 1 tablespoon lemon juice
  • 2 tablespoon butter

    In sauce pan, combine dry ingredients, stir in cider and lemon juice.  Cook until thickened, remove from heat and add butter.  Makes 1 1/2 cups.
