Honey Puffed Pancakes 

  •  6 eggs
  • 1 cup whole milk
  • 3 tablespoons honey
  • 3 ounces cream cheese, softened
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3 tablespoons butter, divided

    Preheat oven to 400 degrees.  In a blender, mix eggs, honey, cream cheese, flour, salt and baking powder.  Blend at high speed for 1 minute, or until smooth.  Grease 10 inch oven-proof pie dish with 1 tablespoon butter.  Add remaining 2 tablespoons butter to pie dish.  Heat pie dish in oven until butter sizzles.  Pour batter in heated pie dish and bake at 400 degrees for 25 minutes, until puffed and golden brown.  Pancake will flatten to about 1 inch after being removed from the oven..  Cut into 4 or 5 wedges, dust with powdered sugar and serve with Honey Sauce, if desired.  Yield:  4 to 5 servings.

 

Honey Butter Sauce

  • 1/2 cup honey
  • 1/2 cup powdered sugar
  • 1/2 cup butter, softened
  • Cinnamon to taste

    Beat honey, powdered sugar and butter together in microwave safe bowl.  Warm in microwave oven for 1 minute.  Stir well.  Add cinnamon and blend.
